Bake: Molasses Cookies

One of the best presents my brother and I can get is a bag of molasses cookies from Ann McBride, our longtime family friend (and the person I like to call my "fake grandmother").  Her recipe (with slight modifications) after the jump...

Molasses Cookies
Prep Time: 15 minutes
Total Time: 45 minutes
Yield: 30 cookies

0.75 c shortening
1 cup packed brown sugar
0.25 c molasses
1 egg
2.25 c flour
2 tsp baking soda
0.5 tsp salt
0.5 tsp cloves
1 tsp cinnamon
1 tsp ginger
0.25 c sugar

(1) Preheat oven to 375 degrees
(2) Mix shortening, brown sugar, and molasses

(3) Add egg and mix until combined

(4) In a separate bowl sift together flour, baking soda, salt, cloves, cinnamon, and ginge
(5) Slowly add dry ingredients to wet until combined

(6) Roll into 1" balls and dip tops in sugar; Place on a parchment paper lined baking sheet

(7) Bake for about 12 minutes until set but not hard; Cool on a wire rack

Notes:  I doubled the salt from the original recipe (as I almost always do with cookies).  The original recipe also called for chilling the dough for 1 hour.  I baked half right away and chilled the other half.  The chilled dough is definitely easier to roll, but I didn't notice a big difference in taste.

That looks good. I know how much you and your brother look forward to Ann's cookies.
