Cook: Baked Chickpeas with Tzatziki


J and I have been on a falafel kick lately.  We've been eating at Maoz at least once (ok, twice) per week for the last month or so.   While their falafel sandwiches are delicious, they are deceptively caloric.  It's vegetarian, it's gotta be good for you, right?  Apparently not.  Also, their delivery takes over an hour to arrive.  So, I took the flavors of the falafel sandwich, and made a baked chickpea "fritter" with tzatziki and cabbage.  Enjoy!



Baked Chickpeas with Tzatziki
Prep Time: 10 minutes 
Total Time: 30 minutes
Yield: Serves 2

1 can chickpeas, rinsed and drained
1 small onion, diced
1 tbsp fresh parsley, minced
1.5 tbsp garlic, minced
1 tsp coriander
1 tsp cumin
1 cucumber, peeled, seeded, and diced
1 egg yolk
1 tbsp fresh dill, chopped
1 tbsp fresh mint, chopped
1 cup plain greek yogurt
juice of 0.5 lemon
salt and pepper
olive oil
1 c shredded green cabbage
1 c shredded radicchio


(1) Preheat oven to 375 degrees
(2) Mash chickpeas by hand or pulse 3-4 times in a food processor

(3) Mix in onion, parsley, 1 tbsp garlic, coriander, cumin, and a pinch of salt and pepper

(4) Add egg yolk and mix until combined

(5) Drizzle olive oil on the bottom of a baking dish
(6) Form patties about 3" in diameter and 0.5" thick

(7) Place in baking dish

(8) Bake for 10 minutes
(9) Drizzle additional olive oil over the tops of the fritters; bake for another 10 minutes
(10) Meanwhile, combine cucumber, yogurt, dill, mint, lemon juice, remaining garlic and a pinch of salt in a blender

(11) Blend until smooth
(12) Place cabbage and radicchio on a plate, top with 2 fritters, serve with tzatziki

Notes: You can try to flip the fritters at the halfway point, rather than drizzling oil on top, but I found that they didn't flip very easily.  Make this dish into a salad by tossing cabbage, radicchio, tzatziki, and cucumbers with the fritters (breaking up the fritters into crouton-sized pieces).  I transferred my olive oil to a squeeze bottle a few weeks ago - best decision ever - I highly recommend it.

Looks great. I'm on a tzatziki kick myself at the moment. I make mine with zero fage, a little grapeseed oil and chopped chives...C likes it too and we use it as a condiment on everything- from fish to potatoes.
