Hurricane Day 1: Brown Butter Sugar Cookies


Not much in the apartment besides butter, sugar, flour, and eggs, and the last remaining grocery store has a line out the door.  Stranded inside, with train service suspended, tunnels closed, and flood waters rising, what's a girl to do?  Bake!



Brown Butter Sugar Cookies


(sorry for lack of step-by-step pics!)

2.25 c flour
1 tsp baking soda
0.5 tsp baking powder
1 tsp salt
2 stick butter
1.5 tsp vanilla
1 c sugar
.5 c brown sugar
2 medium eggs (or 1 jumbo egg), room temperature

1. Brown butter in saute pan over low heat, allow to cool
2. Beat butter with sugars until blended
3. Add egg(s) and vanilla, beat until combined
4. In a separate bowl, mix flour, baking soda, baking powder, and salt
5. Add flour mix to butter mix and beat until combined
6. Cover and chill 20 mins
7. Preheat oven to 375 degrees
8. Roll dough into 1" balls and roll through granulated sugar to coat
9. Bake on parchment paper lined baking sheet for 5 mins, then press each down with a fork
10. Bake for another 8-10 mins until beginning to brown
11. Cool on wire rack
