Bake: Mom's Easy Peanut Butter Cookies

Having the urge to bake last night, but not wanting to go to the store, I decided to make a peanut butter cookie recipe my mom gave me.  It's simple, fast, and delicious!  Recipe after the jump...




Easy PB Cookies
Prep time: 15 minutes
Total time: 30 minutes
Yield: 24 cookies

0.5 cup peanut butter
0.5 cup butter, softened
0.5 cup brown sugar, firmly packed
0.5 cup granulated sugar, plus a little more
1 large egg
0.5 tsp vanilla
1.25 cups flour
0.75 tsp baking soda
0.25 tsp salt

(1) Preheat oven to 375 degrees
(2) Mix together peanut butter, butter, brown sugar, granulated sugar, egg, and vanilla until creamy

(3) Slowly blend in flour, baking soda, and salt

(4) Form dough into 24 balls, about 2 inches in diameter, and place on a parchment-paper-lined cookie sheet

(5) Dip a fork in granulated sugar and use it to flatten the dough balls in a criss-cross pattern

(6) Bake for about 8 minutes, until golden brown

(7) Cool with bottoms up on a wire rack

Note: To keep cookies moist, place them in a sealed container with a slice of bread.
