Bake: Chocolate-PB Cookies

The classic combination of chocolate and peanut butter.




Chocolate-PB Cookies

Prep Time: 15 minutes
Total Time: 35 minutes
Yield: 24 cookies

1.5 c flour
0.5 c processed cocoa
0.5 tsp baking soda
1 tsp salt
4oz dark chocolate
0.5 c butter
1.5 c sugar
1 egg
1 tsp vanilla
2 tbsp brewed coffee
1.5 cups peanut butter chips

(1) Preheat oven to 375 degrees
(2) Melt chocolate and 1 tbsp of the butter in a double boiler

(3) In a separate bowl, beat sugar and remaining butter together

(4) Mix in melted chocolate

(5) Beat in egg, vanilla, and coffee

(6) In a separate bowl, mix together flour, cocoa, baking soda, and salt

(7) Slowly mix dry ingredients into the wet ingredients until combined

(8) Fold in peanut butter chips

(9) Roll into 1" balls, place on a parchment paper lined baking sheet, and press down in the center with a fork

(10) Bake for about 10 minutes (it's ok for these cookies to be a bit under-done); cool on a wire rack

Notes: The coffee helps bring out the flavor of the chocolate.  Feel free to substitute milk chocolate or semi-sweet chocolate for the dark chocolate.

i recommend http://www.scharffenberger.com/ for chocolate. not sure if it bakes well. just tastes good!
